Un reachable record
Watching and enjoying the great documentary by Ken Burns "Baseball" on PBS and was very surprised to learn that AFTER DiMaggio safely hit in 56, missed one game then hit safely in the next 16 ..
That means he hit safely in 72 our of 74 games. TRULY incredible

Even more incredible it was 72 out of 73. 
There are a lot of unbreakable records in baseball mainly because the game is different now, but this one is is at least possible. Career wins for a pitcher, that is unbreakable.

Must have been some year considering Ted Williams hit .406 with a 1.287 ops.

Career losses as a picher may be unattainable as well.
Same guy, Cy Young....315 losses

Career shutouts, complete games, innings pitched are all safe. Career strikeouts, base on balls, ect. ect. Anything in pitching that requires a career of endurance.
Batting records are all fair game, though Joe's streak would be tough to break.

Before DiMaggio went on that tear, the Yankees were 51/2 games out of first place. When the streak was over they were in first and the Yankees had lost only 13 games during that entire 56 game hitting streak. They ended up winning the pennant by 17 games over the second place Red Sox.
