There is no 100% effective defense against E.coli especially if you serve raw produce, particularly lettuce. You can take every precaution known and still get hit with an E.coli outbreak. It's just bad luck for Chipotle.

I know I'm more than two years late in this response but I just saw your post when this thread was reincarnated.

Cafe Rio has cilantro lime rice and is far superior to Chipotle on every metric except sales. It was the only place open in St. George, Utah on a Sunday night when my wife and I overnighted on our way to Zion. We have since discovered it's a chain with a small footprint in the west but well worth seeking out.

I stop by the one in Manhattan Beach anytime I'm going to LAX and have also driven over an hour to the nearest one in Santa Clarita to where I live. We plan routes around their locations whenever traveling.

Their signage pushes the barbacoa pork as their signature dish but it's overly sweet for my taste. You really can't go wrong with the fire roasted chicken.
