What's your favorite food?

Please note that I'm not asking for the food that you currently eat the most...because health concerns may prohibit you from eating the way that you wish you could. I am asking for your favorite meal...period!

Mine is thick spaghetti with meat sauce...followed by a creme brulee dessert.

Freshly caught brook trout from a handful of remote lakes in Arizona's White Mountains.

Fyi, water temp, elevation, and time of year when fish are caught matters.

Ideal elevation for Arizona lakes is about 9000 feet and second week of October through first week of November is usually best.

If your fishing trip takes you farther north - you can likely fish lakes at lower elevations and a few weeks earlier in the season. Fall colors exploding in the immediate area are usually a good sign.

Cleaning the fish: Gut and gill only. Leave the skin and head attached.

Slowly grill that same night over a glowing bed of Juniper coals.

There's a knack to it. After starting the campfire don't rush.

Let the fire burn down until it's a glowing bed of coals. Then let the coals burn down a little more.

Be careful not to position the grill too close to the coals and do not overcook. I can't stress that last part enough. It's important if you want to bring out the wild flavor of the fish.

It's done as soon as you can separate the meat from the skin with just the tiniest bit of effort.

Cooked just right, with nothing added - there's nothing else like it in this world.

What to serve with it?

Dress up some potatoes any way you like. Poke a few deep holes into each one so they don't explode in the fire and wrap individually in foil.

Bury the potatoes in the coals a good 30 minutes before you even think about setting up the grill for the fish. Potatoes are done when you can feel them getting soft.

If you time things right both fish and potatoes will be done about the same time.

After dinner, build the fire up and throw back a few beers.

Hopefully it's an outing where you find yourself among good company - and you get to hear some good stories and tell a few of your own.

Love my ribeyes. I am a world class carnivore.A day without animal flesh is like a day without sunshine.

I also make a macaroni and cheese with bacon.I make a béchamel sauce for the cheese part,to which I add the bacon drippings. I add the bacon and I serve it fresh, not baked.For health reasons, I only do this once or twice a year.

Not really a dessert type as is my wife.I'll always eat it but it's usually at somebody else's house.

Thin sliced medium rare filet mignon sandwich on Sourdough. Thin slice of high quality Swiss melted just a bit.

A small dip of au jus and maybe a honey mustard dip for a little variety

My wife makes it so damn good it’s amazing.

You can do it with lesser cuts of beef, but the filet is tops.

2nd on the list.

Baltimore crab cakes from some secret spots CJ’s Dad used to take me too.

I love the filet mignon but would high lite a slightly different meal to cut bread out of the deal.

Go to your favorite butcher shop and get 2 8 oz center cut top sirloin's

(dry rub first if you like) let them sit for 1 hour on your counter top.

I like to use a 12 in cast iron skillet with EVOO when at 250 degrees and 2 minutes per side.

The bread I substitute with home made string fry's, the point is to put a bowl between two and just eat a small amount.

The vegetable I prefer much more of is broccoli.

The baseball is a lesser cut of beef often not found in supermarkets because it is the cut they sell to restaurants, find it and give it a try.
