It has been a few years since being there so I can not same it is the same but glad to share. For me it was all about a nice seat in the sports book with electrical outlet for the laptop. Paris sportsbook was hard to beat having everything I wanted, my trips averaged 6 to 8 days with the wife. Having a location I could be in the sports book for the afternoon and the wife could go close by and pop in when bored was cool for her, she liked Bills which is no more but was Barbary Coast and Bellagio etc. When in Paris one of the book managers was AL, a gruf talking black man who I could always count on for a comp to the Paris buffet and a line pass to get to the front if there was a line twice for my stay often in Ballys or Paris hotel I got great rates for. I loved to go to Tony Romas for beef ribs, I think they are gone too. Breakfast was always tuned to getting sports book early, Planet Hollywood Mall leftover (Alladin desert passage mile I think) a few Breakfest joints in there. The variety of dinner options was fantastic. When I wanted a different sports book I was in a cab to a very short drive to the Palms, the manager there let me have the or multiple versions of the racing form for a buck each and I got the buck back if I returned them without marking them up (at Paris racing forms were free to me) Everything like concerts I got reservations weeks in advance and some really great ones, once went to a Trisha Yearwood when she was at the height of popularity all her hits normal length concert with a 6 song encore ending with the ending song "somewhere over the rainbow bringing down the house. Red Rock canyon as well as the casino was real cool. The Wynn sports book always was fit into a trip.
More than you asked for, so will end it by saying driving around the area you will learn what to avoid (roads) and how they drive can be a challenge.

This question is often asked here, and my favorite sportsbook is never the one mentioned by the other posters here, probably because most players are looking for liberal free beverage privileges...and I, personally, never drink when I gamble. But if you choose the sportsbook at the Wynn, and you look me up...then the drinks are on me.

Thaskalos will be the one with the off-duty showgirls on each arm.

The more accurate maneuver would be to look for the guy with the most losing mutuel tickets scattered upon his desk.

Yeah, well you're not that guy either, as all your bets go through your bookie... ...No losing mutuel tickets at the Wynn, as you're just using it for your sports action, unless you stack those losers as well...

Boulder Station, Sunset Station, and Sam's Town are the closest as you mentioned. Green Valley Ranch is a little more upscale and not that far from you. Good luck!

I agree about the Paris. They took good care of me when I was there.
