Winx has indeed beaten First Seal but to suggest Winx is significantly better is rather absurd given their head-to-head record.
Again, when First Seal was beating Winx, she wasn't winning all those races and Winx was well beaten. That screams and shouts that First seal was not a world beater and the Winx of that time period was not as good as the Winx we saw later.

If Winx was coming in 2nd in all the head to head races and First Seal was the horse beating her and winning every time, then we'd know that Winx was already really good, but she ran into an even better horse.

WAY more likely is neither of them was a world beater at the time they were running against each other but Winx eventually got much better. If not, she would have been beaten here or there by other horses like she was early in her career when she was finishing off the board.
