Scripture doesn't say that salvation is OF the Jews -- but that it's FROM the Jews. Was not Jesus a Jew? Did not the nation of Israel bring forth the promised Messiah who would fulfill the Abrahamic Covenant by bringing salvation to the whole world (Jews and Gentiles)?
But you also conveniently forget that the Jews who wrote scripture were at the same time
brutally honest about their own failings; for they often wrote about themselves in the most unflattering terms.
