I've always been curious as to what track is on the cover of this book.

Looks to me like Belmont, circa late 60's.

The book itself does not indicate the track, as far as I can tell, although the back cover says that the photo was taken by Simon Metz, if that's any help.

I'm going to say that's Belmont too.
Looks like two turf courses...I'd say Belmont.

The two turf courses is the clincher; also, I believe the building with the water tank on the roof is an old movie theatre (now gone) on Jamaica Avenue, probably the Bellerose. Not far from my old stomping grounds a few miles to the west.

No doubt its Belmont - they are the only track that uses that design for their 1/16 poles.
