I don't suppose there is a place that one can go to see horses that have been put on the vets list at tracks?

I believe NYRA used to include this information at the bottom of their entries, a list of horses that were recently scratched sick or on the vet list, but now the entries are from Equibase and the info isn't available.

For horses in California, refer to the CHRB website www.CHRB.CA.GOV (http://www.CHRB.CA.GOV) there is a section titled Vets list. Uncertain how frequently it is updated. It shows the horses name, date, reason and trainer.
