I listened to the first part JustCoolGene and its excellent. I left off on the takeout part. I will finish listening in the next hour or so. He makes sense to me.

At the 9 to 11 minute mark he makes a startling anecdote about takeout and a "secret" experiment done many years ago proving that lowering takeout will improve the bottom line.
