For some reason I can't "hide" the update as I have previously with others - IE7 for example. Why?

If you notice on that same place there is something to block IE 7 as well. Microsoft isn't full of dummies. They know their "new" software is below par.

I do not get the notification, so I cannot tell you if it will block that as well.

I think your best bet is to download the ISO image, burn it to CD and then install it.

Gives you total control on backing up and setting a restore point before you do it. Make sure you reboot after setting your restore point just to be safe.
