Why do sme races have a distance listed as " about " 7/8 or about a mile and 1/16. Some of these races are on the dirt

It just means that the exact distance of the race is a little different from the standard. For example, Keeneland's *7f races are actually close to 7.3 furlongs. They are closer to 7.5 than 7.0 furlongs.
