They'll either cap the payoff or limit the bet, probably both.

One way or another, they will limit their risk exposure.

There is no book anywhere that I am aware of that will take $500 win bets on any track running and pay track odds.

If you bet into the mutual pools you'll get track odds, but they will be reduced by the effect of your wager.
